Tagliatelle derives its name from the Italian verb tagliare-meaning to cut. Traditionally from Bologna, the noodles are usually 3/8" wide. Meat sauce is the classic sauce, as in Tagliatelle all Bolognese. It also goes well with wild game, rich creamy sauces, or porcini mushrooms. Tagliatelle is often substitued for fettuccine.
